Romanesco: What It Is and How to Make It

Today I'm going to be telling you guys about a very unique vegetable that some of you might not know about. And that vegetable is romanesco! Now if some of you are asking "what in the world is that?", I'm going to give you a quick run-down of what it is and why I love it. I just gotta get the word out on how awesome this stuff is! What Is Romanesco? If you were to take a head of broccoli and decorate it with a beautiful pattern of spirals, then you get an idea of what it looks like. Romanesco is a plant that is from the cauliflower family. Not only does it taste great when incorporated into a dish, but it's just such a beautiful vegetable. I mean, just look at the pattern on it! That's truly a gift from Mother Nature! The taste of it is very similar to traditional cauliflower with a bit of an earthier kick to it. Making it great for eating raw, lightly cooked or roasted in the oven. It's truly a one-of-a-kind and very versatile vegetable.

My Favorite AIP "Cheese"

Every once in awhile, there comes a recipe that you make and it just blows you off your feet. Today I'm going to share with you an AIP-friendly, nut free and dairy free recipe that did just that! It's a short post, but I just got to get the word out there about how great this is. One day I was exploring for a unique and creative recipe to use some zucchini we had leftover. Where we live, we get great zucchinis all year round, so it definitely means incorporating them in a lot of different dishes. When I wasn't sure what to make, I happened to stumble across a recipe for "cheese" made out of zucchinis from a blogger I love called A Squirrel In The Kitchen . These AIP-friendly egg rolls are perfect for anyone looking for a tasty treat! The skies the limit when it comes to this egg roll recipe because it works with just about anything you have on hand. They are also paleo friendly, gluten free and vegan. Also, this recipe would just not be the same if it wasn’t for the amazing coconut wraps from  Nüco ! Why I Love Bountiful Farms!

I cannot stress enough on the importance of knowing where your food comes from. And what better place to get fresh produce then directly from the farm? Nothing makes me happier than seeing where my vegetables come from. If more children got to go to farms and pick their own vegetables, they might be willing to eat more of them. Farm-to-table truly works! When you get to see firsthand the chickens that laid your eggs and the soil that your veggies grew in, then you truly can see the gifts that Mother Nature has given us.
