AIP-Friendly Egg Rolls

These AIP-friendly egg rolls are perfect for anyone looking for a tasty treat! The skies the limit when it comes to this egg roll recipe because it works with just about anything you have on hand. They are also paleo friendly, gluten free and vegan.
Also, this recipe would just not be the same if it wasn’t for the amazing coconut wraps from Nüco!
When I discovered them and found out how amazing their wraps were, there was no going back for me! Not only do they have a great taste, but are only made with three simple and organic ingredients:
  1. Coconut meat
  2. Coconut water
  3. Coconut oil
I’m not kidding, that’s all that goes into these! So if you’re looking for a great product to use, Nüco is the way-to-go.

AIP Egg Rolls
Ingredients
  1. 6 Nüco Coconut Wraps
  2. 1 cup napa cabbage
  3. 1 cup shredded carrots
  4. 1 cup shredded zucchini
  5. 1/2 cup kale or greens of choice (bok choy, chard, etc.)
  6. 2 tbsp. Braggs Liquid Aminos
  7. 2 tbsp. coconut oil
  8. Seasonings of choice
Instructions
  1. Shred carrots and zucchini and chop cabbage and kale.
  2. Melt 1 tbsp. coconut oil in a saucepan on medium heat. When oil is melted, add Liquid Aminos and seasonings.
  3. Sautee veggies until tender.
  4. Remove the veggies from the saucepan and set aside.
  5. Fill and fold egg rolls (see How To Fold Egg Rolls for instructions)
  6. Brush egg rolls with the remaining tablespoon of coconut oil
  7. Then bake in the oven at 350 degrees until they are golden brown. That's it!
How To Fold Egg Rolls
  1. Place coconut wrap in a diamond shape (with a point facing you)
  2. Add filling
  3. Fold sides into the filling (left and right)
  4. Fold the bottom corner towards the middle and roll into the shape of an egg roll
  5. Wet the top corner to seal the egg roll closed
Simple Sweet & Sour Egg Roll Sauce
  1. 2 tbsp. raw honey
  2. 1 tbsp. Braggs Liquid Aminos
  3. Just combine the two ingredients together and you've got your sauce! (This recipe makes one serving)
