Romanesco: What It Is and How to Make It
Today I'm going to be telling you guys about a very unique vegetable that some of you might not know about. And that vegetable is romanesco!
Now if some of you are asking "what in the world is that?", I'm going to give you a quick run-down of what it is and why I love it. I just gotta get the word out on how awesome this stuff is!
What Is Romanesco?
If you were to take a head of broccoli and decorate it with a beautiful pattern of spirals, then you get an idea of what it looks like. Romanesco is a plant that is from the cauliflower family. Not only does it taste great when incorporated into a dish, but it's just such a beautiful vegetable. I mean, just look at the pattern on it! That's truly a gift from Mother Nature!
The taste of it is very similar to traditional cauliflower with a bit of an earthier kick to it. Making it great for eating raw, lightly cooked or roasted in the oven. It's truly a one-of-a-kind and very versatile vegetable.
Of course, along with all produce, it's best to shop for the best quality when selecting your romanesco. Make sure that when you're buying it that it's organically grown and not conventional.
My friends at Bountiful Farms provide our family with some of the best farm-grown vegetables, especially romanesco. The benefits of eating Romanesco are similar to those of other cruciferous vegetables. It is high in vitamin A, C, K, iron, zinc, manganese, protein and dietary fiber. And that's not even all of the vitamins and mineral you can find in this amazing vegetable! It is also a natural antiviral, anti-inflammatory and antioxidant.

Roasted Romanesco
Roasted Romanesco
Ingredients
- 1 head Romanesco
- 3 tbsp. olive oil
- 1/4 tsp. seasonings of choice
- Salt to taste
Instructions
1. Preheat oven to 400 degrees and line a baking sheet with parchment paper.
2. Cut off romanesco florets and place inside a large bowl. Season with salt and the seasonings of your choice. Add olive oil and toss to coat the florets
3. Lay the florets on the baking sheet and cook for 20 minutes. Toss them halfway and cook until tender.
4. Serve hot and enjoy!
