My Favorite AIP "Cheese"

Every once in awhile, there comes a recipe that you make and it just blows you off your feet. Today I'm going to share with you an AIP-friendly, nut free and dairy free recipe that did just that! It's a short post, but I just got to get the word out there about how great this is. One day I was exploring for a unique and creative recipe to use some zucchini we had leftover. Where we live, we get great zucchinis all year round, so it definitely means incorporating them in a lot of different dishes. When I wasn't sure what to make, I happened to stumble across a recipe for "cheese" made out of zucchinis from a blogger I love called A Squirrel In The Kitchen . These AIP-friendly egg rolls are perfect for anyone looking for a tasty treat! The skies the limit when it comes to this egg roll recipe because it works with just about anything you have on hand. They are also paleo friendly, gluten free and vegan. Also, this recipe would just not be the same if it wasn’t for the amazing coconut wraps from  Nüco ! I cannot stress enough on the importance of knowing where your food comes from. And what better place to get fresh produce then directly from the farm? Nothing makes me happier than seeing where my vegetables come from. If more children got to go to farms and pick their own vegetables, they might be willing to eat more of them. There is nothing better than a chewy chocolate treat. Yes, there is… A NO-BAKE chewy chocolate treat! Now in the past I’ve shown my love for bite-sized snacks and desserts, but this recipe takes the experience to another level. This recipe only takes a few natural ingredients, yet taste so incredibly delicious.   All you really need is nuts, dates, and some dark chocolate. Seriously, that’s it! The dates, however, are truly the winner in this treat.  I’m so excited to share this new recipe with you guys: Pecan Pie Bites! These festive, pop-in-your-mouth treats will make a great addition to your desserts this holiday season. Another great thing about this is that it only requires a few things and doesn’t require the oven. So for those of you who are in need of a quick thing to whip up for the upcoming holidays, look no further. They will bring bundles of joy! Pecan Pie Bites Write a review Save Recipe Print Ingredients 15 Medjool dates 1 cup pecans Splash of water Touch of vanilla Pinch of salt Instructions Pulse the pecans in a food processor until fine. Then add your dates, vanilla and splash of water and pulse until all of the ingredients are well incorporated Take your mixture and form it into one-inch balls. Place balls onto a lined baking sheet and refrigerate until firm. Enjoy!

I love grain-free tortillas and the cuisine that you can make with them, but it always was a goal of mine to be able to find the perfect recipe so I could make them at home. Looking for a grain-free and great-tasting snack? You’ve come to the right place! Everybody’s always in the search of a snack that is healthy and delicious, but it’s not always that simple. Even in “healthy” chips, sometimes there’s ingredients lurking that we don’t want (or need) to put in our bodies. So why not make them yourself? I’m all about making guilt-free indulgences, and these are one of my personal favorites (along with a list of many others). These sweet potato chips truly satisfy the craving for chips in a healthier way! Cauliflower is quite an unusual ingredient to be found in recipes, but we love experimenting with it. From the first time I tried it in a roasted vegetable medley, there’s no going back! Since people eat with their eyes (and don’t try to deny it), we would think of cauliflower as a vegetable lacking the vibrant colors that others have. But the irony of this mysterious character is that it’s very versatile and practically goes into anything. And when I say anything, I mean it! With a rise of grain-free and paleo lifestyles, people have been looking to it as a way to make versions of carb-filled foods. Date Nut Bread

Our family has a few traditional treats that we whip up around the holidays. But this year, I believe a “must-have” for any time of the year is this amazing date nut bread recipe. It’s a delicious and moist bread with just the right amount of sweetness. Not to mention we unintentionally baked it on December 22nd, which I recently learned was “National Date Nut Bread Day” (so mark the calendars for next year, people!)  Anyway, I don’t know what it is about this recipe but once I tried my first slice, I found it hard to stop! For as long as I could remember, we would talk about how tasty this bread was and how my great-grandmother used to make this, as this is a spin-off of her recipe. It does take a little bit of time on your part (just ask us!), but the outcome is definitely worth it.  I got two loaves out of this recipe, but you can seperate the batter and make them into muffins if you would like.
