Caribbean Veggie Kabobs

Kabobs like these are one of our go-to summertime staples. If it can go on a skewer, our family will love it! These veggie kabobs are our favorite variation. They’re so versatile and work with anything you have on hand.
It all starts with an awesome lime vinaigrette. It only requires a few ingredients but brings a Caribbean kick to your mouth.
Pair these kabobs with a nice grilled chicken burger and it's perfect! What I like to do is use any of the leftover vinaigrette and incorporate some minced mushroom stems into the couscous. It gives it that much more flavor and nothing goes to waste!

Caribbean Veggie Kabobs
Ingredients
  1. 1 red onion, cut in quarters
  2. 1 package cherry tomatoes
  3. 1 package button mushrooms, stems removed
  4. 2 zucchinis, thickly sliced
Instructions
  1. Soak wooden skewers in water to prevent them from burning. Assemble the kabobs as you wish.
  2. Place on hot grill. Apply the marinade (recipe below) and cook until veggies are tender and tomato skins pop.
Lime Vinaigrette
Ingredients
  1. 3 tbsp. fresh lime juice
  2. 2 tbsp. melted coconut oil
  3. 1 tsp. ground cumin
  4. 2 tsp. minced garlic
  5. 1 tsp. allspice
  6. pinch of pink salt and pepper to taste
Instructions
  1. Combine everything in a small bowl and whisk together.
  2. Apply to your kabobs, it's as simple as that!
