Black Bean Burger and Carrot Fries

It’s the typical American dinner: A burger and french fries. I’m sure you had this meal at least once. But have you ever had a black bean burger and carrot fries?
Maybe, maybe not! Now some of you might be thinking this: That’s crazy, it can’t be good!
Trust me, I had my doubts too. But I found out for myself that these were incredible! When you realize how easy it is to whip up these vegetarian burgers, you won’t want to go back to your ordinary burger.
And the carrot fries… I’m in love with them! 😀
The kids will never know the difference if you serve them these “fries” (you have to get them to eat their veggies some how).
So what do you say? Let’s whip up a healthy twist on an all-American meal!

Black Bean Burgers

      Ingredients

      • 1 Hamburger bun (2 oz.)
      • 3 tbsp. melted coconut oil, divided
      • 2 tsp. minced garlic
      • 1 (15.5 oz.) can black beans, rinsed and drained
      • 1/4 tsp. pink salt
      • 3/4 tsp. turmeric powder
      • 2 pinches chili powder
      • 1 egg, lightly beaten
      • 1 egg white, lightly beaten
      • Toppings of choice

      Instructions

      1. Tear your hamburger bun into pieces and place in a food processor. Process it four times or until crumbs measure about a cup. Transfer the crumbs into a bowl. 
      2. Add 1 tablespoon of oil, garlic, and beans into the processor. Pulse until the beans make a thick paste. Incorporate the bean mixture into the breadcrumbs. Season with the turmeric and salt.
      3. With dampened hands, divide your mixed into four portions (which is about a 1/3 cup of your mixture). Shape them into patties.
      4. Heat your remaining 2 tablespoons of oil in a skillet over medium-high heat. Add your patties to the pan; reduce the heat to medium and cook for four or until the bottom edges get brown. Carefully turn them over and cook for three minutes or until bottom edges are done.
      5. Place them on buns and top them with what you wish!

      Carrot Fries

          Ingredients

          • 1 lb carrots
          • 2 tbsp. melted coconut oil
          • pinch of pink salt
          • pinch of pepper

          Instructions

          1. Preheat the oven to 425 degrees and line a baking sheet with parchment paper.
          2. With a sharp knife, slice the tops and bottoms off of your carrots. Cut them into quarters.
          3. Place them onto the baking sheet and sprinkle with the salt and pepper. You can add any other herbs and spices as well
          4. Bake them for twenty minutes or until they are tender.
          5. Serve while they are hot and enjoy!
