2 Ingredient Pumpkin Muffins


Even though you could really call this a fall recipe, it’s truly an anytime recipe
They’re amazing, simple and only require two ingredients. Yes, you read that right. ONLY TWO INGREDIENTS!
  1. Pumpkin puree
  2. Yellow cake mix
That’s it! If that doesn’t get you in the mood than I don’t know what will.
By the way, the yellow cake mix that I used for this recipe is from a company that is dedicated to healthier sweets. The brand is called Madhava Sweeteners and I would recommend them to anybody looking to make something sweet without having too much guilt.
Their baking mixes are organic, non-GMO verified, preservative free, and made with ancient whole grains.
So if you’re looking for a delicious baking mix or a sweetener such as honey, this is the brand to look for!
Anyway, back to the muffins! I think it’s time we get things started with these simple muffins!
Two Ingredient Pumpkin Muffins
Ingredients
  1. 1 box Madhava Yellow Cake Mix
  2. 1 can pumpkin puree (15-16 oz -- not pumpkin pie filling!)
Instructions
  1. Preheat the oven to 350 degrees.
  2. In a large bowl, combine the yellow cake mix and canned pumpkin. Stir the two ingredients together until it looks like batter.
  3. Pour batter into muffin pan
  4. Bake for 18-20 minutes. Test for doneness with a toothpick.
  5. Allow to cool before serving and enjoy!
Notes
  1. I got 6 large muffins out of this recipe but you can simply place the batter into 12 smaller muffins.
  2. If not Madhava cake mix, any other organic cake mix should do the trick.
