There is nothing better than a chewy chocolate treat. Yes, there is… A NO-BAKE chewy chocolate treat! Now in the past I’ve shown my love for bite-sized snacks and desserts, but this recipe takes the experience to another level. This recipe only takes a few natural ingredients, yet taste so incredibly delicious.   All you really need is nuts, dates, and some dark chocolate. Seriously, that’s it! The dates, however, are truly the winner in this treat. And you don’t have to feel limited to just what I’ve put in them, another great thing about this recipe is that so many different things you can add to make these bites. The combination possibilities are practically endless. Sweet, chewy and coated in decadent dark chocolate, these make a great dessert for any occasion. So let’s get started, I’m hungry just writing about it! Chewy Chocolate Cashew Bites Ingredients 1 cup pitted dates 1 cup cashews 1 tsp. honey 1/4 tsp. vanilla extract Pinch of salt Splas...

Why I Love Otto's Cassava Flour + Grain-Free Tortilla Recipe!

Image
I love grain-free tortillas and the cuisine that you can make with them, but it always was a goal of mine to be able to find the perfect recipe so I could make them at home. I would always try recipes with different flours and ingredients, but they always had some kind of imperfection. I would get frustrated, but then a special ingredient walked in and took my tortilla experience to the next level! Otto's Cassava Flour is what I always like to use when it comes to making tortillas and other baked goods. I’ve used it many times and the experience gets better and better every time!  Some of you that aren’t quite familiar with this might ask, “What the heck is cassava?” \ Technically, cassava flour comes from the yuca root, an ingredient that helps give us high amounts of nutrients and lower our inflammation levels. So it’s practically the Holy Grail when it comes to grain-free and gluten-free baking! Otto’s products are also nut-free, AIP friendly and even certified by the Pa...

Sweet Potato Chips

Image
Looking for a grain-free and great-tasting snack? You’ve come to the right place! Everybody’s always in the search of a snack that is healthy and delicious, but it’s not always that simple. Even in “healthy” chips, sometimes there’s ingredients lurking that we don’t want (or need) to put in our bodies. So why not make them yourself? I’m all about making guilt-free indulgences, and these are one of my personal favorites (along with a list of many others). These sweet potato chips truly satisfy the craving for chips in a healthier way! They’re addictive, crispy and impossible to stop eating… Until you look down at the plate and see that they disappeared, I always hate when that happens!  When it comes to making sweet potato chips at home, there’s two things you have to get down: (1). They need to have the perfect crunch, you don’t want to end up snacking on soggy sweet potatoes. (2). You don’t want to deep fry them in oil, you want to oven-fry them Sure, it’s a lot more...

Cauliflower Rice

Image
Cauliflower is quite an unusual ingredient to be found in recipes, but we love experimenting with it. From the first time I tried it in a roasted vegetable medley, there’s no going back! Since people eat with their eyes (and don’t try to deny it), we would think of cauliflower as a vegetable lacking the vibrant colors that others have. But the irony of this mysterious character is that it’s very versatile and practically goes into anything. And when I say anything, I mean it! With a rise of grain-free and paleo lifestyles, people have been looking to it as a way to make versions of carb-filled foods. That’s why I think cauliflower has some magic behind it, because it literally can transform into what it wants.  Grain-free pizza crusts, sauces, mashed “potatoes” and even rice.   But even if you’re not on the grain-free bandwagon, this rice recipe I’ll be showing you is a creative way to include more vegetables in your diet. I’m super excited to show you...

Date Nut Bread

Image
Our family has a few traditional treats that we whip up around the holidays. But this year, I believe a “must-have” for any time of the year is this amazing date nut bread recipe. It’s a delicious and moist bread with just the right amount of sweetness. Not to mention we unintentionally baked it on December 22nd, which I recently learned was “National Date Nut Bread Day” (so mark the calendars for next year, people!)  Anyway, I don’t know what it is about this recipe but once I tried my first slice, I found it hard to stop! For as long as I could remember, we would talk about how tasty this bread was and how my great-grandmother used to make this, as this is a spin-off of her recipe. It does take a little bit of time on your part (just ask us!), but the outcome is definitely worth it.  I got two loaves out of this recipe, but you can seperate the batter and make them into muffins if you would like. This bread also freezes well so you can keep it i...

Pretzel Pizza Bites

Image
I love a good soft pretzel every now and then. I mean, who doesn’t love that warm and fluffy goodness? Now combine that with pizza and the taste is one of a kind! Ever since I found out how to make soft pretzels at home, it was amazing. The taste was WAY better than those frozen ones in the box that you buy from the store. Since then, we’ve been experimenting with our pretzels to see what kind of variations we could make. And this turned out to be my favorite variation yet! They’re like a pizza roll but even better with that soft pretzel taste. The yeast I used to make this dough was Fleischmann’s Pizza Crust Yeast. Normally, we would only use this yeast to make pizza crusts but we found out that it works great for this recipe as well. So if you wish to make this recipe, I would definitely recommend using this.  This is an appetizer or snack that your friends and family are going to love! So let’s get started with this tasty Pizza Pretzel Bites!   P...
